A family estate for four generations

The family behind our bubbles

In the heart of Champagne, in the small village of Passy-sur-Marne, four generations of the Assailly family have devoted themselves to wine. Their daily work, tradition and dedication go into every bottle: hand-picked grapes, respect for nature and a belief in honest craft.

We are not traders choosing wine from a catalogue. We work in the Assailly vineyards ourselves: tying up the vines in June and picking grapes in September. So we know exactly what is in every bottle and can tell its story.

From the vineyard to your glass

A year of champagne, as we live it with the Assailly family.

  1. Ondřej Mařík tying up vines in the vineyard above Passy-sur-Marne

    01 June

    Palissage

We tie the young shoots between the wires so the grapes get enough sun and air. We come to Passy for this work every year.

  2. Close-up of a flowering vine against the light

    02 Summer

    Flowering and ripening

Over the summer the tiny vine flowers turn into grapes. The slopes of the Marne Valley give them sun and the limestone gives them freshness.

  3. Freshly picked grapes in a crate of the Assailly estate

    03 September

    Hand harvest

In Champagne grapes are picked by hand only. Whole bunches travel to the press in small crates so they are not damaged on the way.

  4. Six bottles of Champagne Nathalie Assailly side by side

    04 Cellar

    Ageing in the bottle

The wine ferments a second time in the bottle and ages on its lees for at least 15 months, vintage wines for at least three years. That is how the fine bubbles are born.

    All the way to you

We import the bottles directly from the estate, without any middlemen. Each one comes with a postcard and a booklet about champagne.

From Passy to Prague

We bring the bottles straight from the Assailly estate in the Marne Valley. From the vineyard where we help to pick the grapes, all the way to your table.

Champagne guide
How can I order champagne?

Write to us using the form at the bottom of the page, send an email or give us a call. We will agree on the selection, the number of bottles and the handover. We handle every order personally, so you can always ask us anything.

Which champagne should I choose?

For an aperitif and light starters, the fresh Brut Tradition or the mineral Blanc de Blancs made from 100% Chardonnay. For sweet desserts and fruit, the Demi-Sec. For a festive dinner, the vintage Millésime or the Cuvée Josépha from old vines. If you are not sure, we will gladly help.

How should I chill and serve champagne?

Fastest in a bucket of water and ice, in about 20 minutes. In the fridge it takes a few hours; better skip the freezer. Serve fresh champagne at around 8 °C and more mature vintage wines a little warmer.

Instead of narrow flutes, try a tulip-shaped glass. The wine shows more aroma and the bubbles last a long time.

How long does champagne keep?

Store unopened bottles lying down, somewhere cool, dark and still. Non-vintage champagne is ready to drink straight away, vintage wines can age for several more years. Finish an opened bottle, closed with a sparkling wine stopper, within two to three days.

How is champagne different from other sparkling wine or prosecco?

Champagne may only come from the Champagne region of France. The grapes are picked by hand and the wine ferments a second time in the bottle, where it then ages on its lees for many months. That gives it finer bubbles and a deeper taste. It is not a pricier sparkling wine, it is a different experience.

Do you host tastings and supply businesses?

Yes. We host tastings for friends, celebrations and company teams, see Tastings. For restaurants, wine shops and hotels we offer trade prices and staff training, see Trade.
